Pumpkin Pecan Bread: Less Fat, More Pumpkin



To me, pumpkin bread is the ultimate in comfort food. But, even when I feel the need for comfort, I avoid making it in summer because to me pumpkins mean autumn--even if here in Southern California, temperatures are registering in the 90's. Whatever the thermometer reading, I felt justified in making pumpkin bread this week.

The recipe I chose is adapted from a reduced-fat and calorie pumpkin pecan bread I found at MyRecipes. Here's my version, with nutritional information and suggested variations at the bottom. I used homemade pumpkin puree, which is very simple to make and I think enhanced the bread's flavor and texture. You can read about how I did it elsewhere on my blog. If you're pressed for time (and who isn't?), use the canned variety. It will be great either way!


Pumpkin Bread With Toasted Pecans

(Two 9x5-inch loaves)


Ingredients

2 cups white all-purpose flour
1 1/3 cups white whole wheat flour (or regular whole wheat)
1 tablespoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger
1 cup granulated sugar
1 cup dark or light brown sugar, packed
3/4 cup egg whites (from about 4 large eggs, or use egg substitute)
1/2 cup canola oil
1/2 cup low-fat buttermilk
2/3 cup water (or liquid from steamed pumpkin)
15 ounces of pumpkin (2 cups fresh pulp minus 1 ounce--or one 15-ounce can)
1/3 cup pecans, toasted and chopped



Directions

Preheat oven to 350 F. Spray two 9x5-inch loaf pans with oil.

In a medium-sized bowl, mix together flours, baking powder, soda, salt and spices. Whisk the dry ingredients until well-combined.

Place the sugars, oil, egg whites (or substitute) and buttermilk in a large bowl. Beat with a mixer (or by hand) at medium speed until well blended. Add the pumpkin and water, beating at low speed until combined. Add the flour mixture and beat briefly at low speed, making sure that all ingredients are incorporated but not over-mixed.

Pour the batter into the prepared pans. Sprinkle toasted pecans on top.

Bake in the oven for 50 minutes to an hour, checking toward the end to make sure the loaves aren't browning too quickly. If they are, place some foil loosely on top. The bread will be done when a toothpick inserted in the center of the loaves comes out clean.

Each loaf makes about 12 generous slices. To reduce the calories even further, cut them in half! The bread keeps for 2 or 3 days at room temperature and freezes well (for about a month) when wrapped tightly in a double thickness of saran, then placed inside a deflated plastic bag. Warmed in the microwave for a few seconds, it tastes as if it just popped out of the oven!

Variations & Enhancements

1. Mix toasted, chopped pecans with 2-3 additional tablespoons of brown sugar and about 1/2 teaspoon of cinnamon. Sprinkle on top of the loaves before baking.

2. Allergic to nuts? Substitute lightly toasted rolled oats for above.

3. Fold in 1/2 cup dried cranberries, raisins or chopped dried apricots--or 1/4 cup chopped candied ginger--just before pouring the batter into the loaf pans.

4. Use chopped walnuts or mixed nuts instead of the pecans. Incorporate the nuts in the batter, then sprinkle a few more on top.

5. Add the grated zest of an orange to the wet ingredients, substituting orange juice (preferably fresh) for the water.

6. Spread the bread with cream cheese, pumpkin butter--or both--for a decadent treat.

7. Serve heated with a scoop of pumpkin or vanilla ice cream for dessert.

Bread Recipe: Wheat, Oats & Honey

It's officially fall in Southern California, with a slight chance of rain. But at my house, it feels like summer, because my poor oven's been working overtime. Despite efforts to eat more produce and less starch, I gave in to an irresistible impulse to make bread. I salved my conscience about my carb addiction by making loaves with whole-grain wheat and oats, using a recipe I found on the back of the Bob's Red Mill Vital Wheat Gluten Flour package. Instead of going with the popular anti-gluten camp, I've gone the other direction, indulging my inner gluten glutton. Not only does the recipe call for 4 1/2 cups whole wheat flour, it increases the gluten load by adding two tablespoons of concentrated wheat gluten--a gray-white powdery ingredient--to the dough.




FYI, the word gluten comes from the Latin word for glue--and it's aptly named, since it's the elastic substance in wheat (also found in rye and barley) responsible for keeping bread "glued" together and, when kneaded, gives the bread a proper rise. Some high-protein flours like whole wheat and rye have a problem developing their gluten--meaning breads made with these flours need help rising (as do I some mornings!). That's where the vital wheat gluten comes in.

For those who are avoiding gluten for health reasons, obviously this bread is not for you. For the rest of you, here's a recipe for a loaf of whole wheat bread with just a hint of oats. I found Scottish oats, also from Bob's Red Mill, at my local Whole Foods. I think rolled oats might do just as well. I reduced the salt by a third and never missed the extra sodium. The loaves were dense but not heavy--great with soup, especially excellent toasted and topped with melted cheese, peanut butter and jelly, butter--or just about anything. I thought the bread might freeze well, but we finished it before we could find out.

Here's the recipe, adapted from Bob's Red Mill.


Honey Oatmeal Bread

(Makes two loaves)

Ingredients:

4 1/2 cups whole wheat flour
2 tablespoons active dry yeast
2 cups milk
1/3 cup honey
1/4 cup vegetable oil
2 teaspoons salt
1/2 cup Scottish oatmeal
2 tablespoons Bob's Red Mill Vital Wheat Gluten


Directions:

1) In a large mixing bowl, combine 2 cups of the flour and the yeast.

2) In a sauce pan, heat the milk, honey, oil and salt until warm (about 115 degrees F).




3) Add the liquid to the dry ingredients. If you're using a mixer, use the paddle attachment to mix at slow speed for about half a minute, making sure to scrape the batter from the sides of the bowl. Beat for 3 minutes at high speed. If mixing by hand, stir until ingredients are well combined--about 5 minutes.




4) Stir in oats, wheat gluten and flour. (The recipe suggests doing this by hand, but I used the dough attachment on the mixer to combine the ingredients briefly at low speed.) Add enough of the remaining flour to create a dough that starts to pull away from the sides of bowl.



5) Turn the dough out onto a floured board, and knead until smooth and elastic, about 8 to 10 minutes.


6) Shape into a ball, and place in a lightly greased bowl, turning to coat the dough. Cover and let rise in a warm place until doubled in size (about 45 minutes).


7) Punch down the dough and turn onto a lightly floured surface. Divide in half. Cover and let the dough rest for about 10 minutes. Shape into two loaves. Place in two greased 8 1/2"x 4 1/2" loaf pans. Cover and let rise in a warm place until doubled in size, about 30 minutes. If you want, brush a little water on top of the loaves and sprinkle with a few rolled oats.


8) Bake at 375 degrees F for 35-40 minutes, until the loaves are well-browned and sound hollow when tapped on the bottom. Remove the loaves from the pans and cool on wire racks. If you can stand to wait, let the loaves cool completely before slicing. However, if you're like me, you probably won't.



Tinkering*:

1) Try using white whole wheat flour for a milder taste.

2) Reduce honey and add 1 or 2 tablespoons of molasses.

3) Knead 1/4 to 1/2 cup of raisins into the dough.

4) Use half all-purpose white flour or bread flour, and leave out the vital wheat gluten--or use just 1 tablespoon.

*I haven't tried these variations, so I can't vouch for the results, but baking and cooking are all about experimentation, so why not give it a whirl?

Raisins, Pecans and Rye--Oh My!



As you have probably gathered by now, I've got a bit of a rye bread obsession. I doubt there's any treatment other than to keep trying new recipes. Here's one for Raisin Pecan Rye Bread from another of my favorite baking books,  "The King Arthur Flour Baker's Companion."  I've been seeking a bread that approximates the crusty artisan loaves I see at local farmer markets and bakeries for $5 or $6 apiece. Having gone through the process of kneading a rather sticky dough and struggling to incorporate generous amounts of raisins, currants and nuts into the mix without accidentally losing my wedding ring in the process, I can understand why the loaves are a bit pricey.

Not to intimidate any novice bakers, but I would agree with one comment in response to the online version of the recipe: this is definitely not a beginner's bread! But, as the saying goes, the proof is in the pudding (or, in this case, the bread!). The sweet, nutty combination of raisins, rye and toasted pecans is addictive. From my standpoint, toasted (or not) for breakfast (or lunch, dinner or snack) with butter or jam, slathered with cream cheese, peanut butter or, as the KAF Web notes suggest, an assertive cheese like Roquefort, it's hard to beat. Another variation of this bread, which I'm sure I'll attempt soon, is for Raisin-Rye Crisps, a cracker-like version--also quite pricey in the upper-crust groceries that sell them around here.

The bread recipe calls for a biga, a starter created in much less time than those used for traditional sourdough breads or rye breads--for example, the rye sour I wrote about previously. The biga in this recipe sits overnight, but if you allow it to ferment longer, it would add more sourness to the bread.

The recipe comes from the book and online recipes, which vary slightly from each other. Note that KAF recipes include both weights and measures for most ingredients. Weighing ingredients, particularly flour, isn't a bad idea, although I often don't do it. The reason it's probably wise is that everyone measures ingredients a bit differently, whereas weights are fairly uniform. I'm more strict about this for flour than for liquids but am not so much of a stickler that I wouldn't round off 1 7/8 ounces flour to 2 ounces.


Raisin Pecan Rye Bread

(Makes one large loaf, about 16 servings)


Biga

1/8 teaspoon instant yeast
1 cup (4 1/4 ounces) unbleached all-purpose flour
1/3 cup (2 5/8 ounces) cool water


Dough

1 1/4 teaspoons salt (the book version calls for 1 1/2 teaspoons, but I prefer less sodium)
3 tablespoons (1 1/2 ounces) brown sugar
1/2 cup (1 7/8 ounces) medium or light rye flour*
1/2 cup (1 7/8 ounces) pumpernickel*
1 cup (4 1/4 ounces) unbleached, all-purpose flour
3/4 cup (6 ounces) lukewarm water
2 teaspoons instant yeast
2 tablespoons (1 ounce) butter, slightly softened
1/2 cup (2 ounces) chopped pecans (I toasted them first)
1 cup (5 ounces) currants or raisins (I used a combination of both)


Make the biga by stirring together the yeast, flour and water. The dough will be very stiff and dry. Place it in a lightly greased bowl, cover it with plastic wrap or a towel, and let it rest at room temperature overnight, or, as I did, for about eight hours during the day. Again, letting it rest longer, will up the acidity and sourness factor.

The next day--or later the same day--combine the biga with the remaining ingredients (except the fruit and nuts) in a large mixing bowl or the bowl of an electric mixer. Mix to form a shaggy, sticky dough. I used the mixer, first combining the ingredients using the paddle attachment for a minute or two, then using my dough hook to knead until the dough started to pull away from the sides of the metal bowl. Knead the dough until smooth, though it will still be quite sticky. Place it in a lightly greased bowl and allow it to rest for 1 hour. It will become puffy, though possibly not double its original size (mine actually did, I think).

Transfer the dough to a lightly greased work surface, gently deflate it, and knead in the nuts and fruit. I found this a bit tricky--a cup of fruit and half cup of nuts is a lot to incorporate into a dough that's so sticky. It helped to dust the dough and kneading board with a bit of flour, adding fruit and nuts a handful at  time and kneading a little after each addition. Some of the fruit ended up falling off the edges of the board, but finally, my fruit-speckled dough was ready to be turned into loaves (I doubled the recipe to make two!).

Shape the dough into a slightly flattened ball and place on a greased sheet pan or round 9-inch cake pan. Cover with some lightly greased plastic wrap or a proof cover. Let the loaf rise for about 90 minutes until puffy. I delayed the process by refrigerating the covered loaves to proof overnight, then allowing a few more minutes to sit at room temperature in the morning. I also brushed the loaves with a little water and sprinkled sesame and poppy seeds on top.

Preheat the oven to 350 degrees F. Bake the bread for about 50 to 55 minutes, tenting it lightly with foil during the final 15 minutes. It's important to keep your eyes on the bread at the end, as it does brown rather quickly. I also recommend turning the bread once about halfway through the cycle to make sure it browns evenly. The interior of the bread should register 190-195 degrees F on an instant-read thermometer. As I don't have one of these (yes, it's on the list!), I used the old thump on the bottom of the loaf technique, plus my trained eyeballs, to figure out that the bread was done.






*Note: I used KAF White Rye for the first and KAF Medium Rye for the second, as I didn't have any pumpernickel. I would probably try a dark whole-grain rye such as Bob's Red Mill organic brand next time--or get the real thing via mail order from King Arthur Flour.

Calories & Points:

According to KAF, each slice of the bread (if you cut it into 16 generous slices of 79 grams each) has about 236 calories, or, if you're going by the Weight Watchers Points Plus system, 6 points. However, as I like my bread toasted thin and crisp, I halve that amount--then eat two slices!


Tinkering:

  • Check out some of the suggestions for the recipe online. I'm eager to try "pammyowl's" gluten-free suggestions with buckwheat flour, cornstarch and an egg to satisfy my gluten-phobic friends and relatives. Stay tuned.
  • Try substituting olive oil or a nut oil for the butter. Instead of (or in addition to) currants or raisins, use dried cranberries or cherries.
  • Use hazelnuts or walnuts or a combination of nuts in place of the pecans.
  • As rye and caraway go so well together, add 1/2 to 1 tablespoon of caraway seeds to the dough and/or sprinkle some on top.
  • Another idea is to use George Greenstein's rye sour in place of the biga for more pronounced sour tang. You would probably need to reduce the amount of added water--or add more flour--as the sour is quite wet.

Sourdough Potato Rye



As promised, here's my post on making a sourdough rye bread with potato and caraway seed. As with any rye bread, it has many steps, but the result is worth the effort. Toasted for breakfast with homemade plum jam or served with split pea or tomato soup for a simple lunch, it's hard to beat. My husband loves rye bread with a generous dollop of peanut butter slathered on top--or with melted cheddar cheese. The recipe uses the rye sourdough starter I wrote about previously and includes mashed potato and some potato water. This improves the bread's texture and helps it keep longer--assuming it doesn't disappear in a couple of days!

The following recipe, along with the one for the rye sour, are from George Greenstein's "Secrets of a Jewish Baker: Recipes for 125 Breads from Around the World," which I highly recommend. I believe Laszlo is the name of the author's father, a master baker who immigrated from Hungary and passed his knowledge and skills on to his son, who shares them with us in this informative book.


Laszlo's Sourdough Potato Rye Bread with Caraway


1 cup warm water, preferably potato water*
1 package active dry yeast (2 1/4 teaspoons)
1/2 cup mashed potato*
2 cups Rye Sour (see 8/15 post)
3 cups first clear flour**
1 tablespoon salt
Additional rye flour, if needed
2 tablespoons caraway seeds, or more to taste (optional)
Cornmeal or rye flour, for dusting baking sheet
Water or cornstarch solution, for brushing loaves***



In a large bowl, sprinkle the yeast over the warm water and allow to soften. Blend in the mashed potato (see first note below) and Rye Sour. Add the first clear flour and stir in the salt with your fingertips to incorporate. Mix with a wooden spoon until the dough comes away from the sides of the bowl.

At this point, Greenstein says to turn out the dough onto the work surface and knead, adding rye flour as necessary, a little at a time, until dough becomes elastic (about 5 to 8 minutes). Rye dough is stickier than other kinds of doughs, so you may just have to do this by feel. (As you can tell, I don't own a bread machine

You can also do a lot of the kneading, as I did, in a stand mixer. I first stirred the dough to make sure most of the flour was incorporated, then used the dough hook on my mixer to do most of the kneading, adding small amounts of rye flour along the way. When the dough began to pull away from the sides of the bowl, I put it onto a lightly floured wooden board and completed the kneading by hand--about another two minutes. You can kind of feel the spring in the dough when it's ready for a rise.

Place the dough on a lightly oiled work surface (I just left it on my board, brushing on a bit of oil), and let it rest for 15 minutes.

Shaping: Punch down, and shape the dough into 1 or 2 round loaves (mine were more oval in shape). Place on a baking sheet dusted with cornmeal or rye flour. Sprinkle caraway seeds on top (it would be fine to incorporate some in the dough earlier if you like). Proof, covered, until doubled in size (mine took about 1 1/2 hours). Brush the tops with water or the cornstarch solution (see recipe below). Stipple the tops of the loaves with 10 to 12 hole using a skewer or ice pick.

Baking: Preheat oven to 375 degrees, and put a baking pan in the bottom of the oven to heat. As you put the loaves into the hot oven, toss 6 to 8 ice cubes into the bottom pan and quickly close the oven door. (You can also fill a liquid cup measure with a mix of water and ice or use a cup of boiling water.) The rising steam helps the bread develop a good crust. Bake for 35 to 45 minutes until tapping on the bottom of the loaves produces a hollow sound. A larger loaf may take 10 to 15 more minutes of baking time.

Cooling: Despite the temptation to cut into the loaves the moment you pull them from the oven, it's better to allow them to cool on a rack until they've reached room temperature. Sourdough breads in particular seem to be a bit gummy when devoured too soon, though that new-baked smell is all but impossible to resist (but aren't all good things?) Yield: Greenstein claims the recipe makes 1 large or 2 small loaves, but my two loaves were both fairly substantial. A large loaf would have been very large indeed.

Notes: 

*Peel and quarter a medium-sized potato and boil in at least 1 1/2 cups of water to cover until soft. Drain, reserving 1 cup of potato water. Cool and mash the potato.

**First clear flour (also called common or clear flour), less refined than most bread flours, is often used in rye breads, as a source of gluten, which rye flour lacks (without gluten, the bread won't rise). The flour is a little hard to find. I order mine from King Arthur Flour, which can get expensive. In this recipe, Greenstein says that 2 1/2 cups all-purpose flour plus 1/2 cup cake or pastry flour can be substituted for the first clear, but he says the bread won't taste as good.

***To make the cornstarch solution, bring 1 cup water to a boil, and dissolve 2 tablespoons cornstarch in 1/4 cup cold water. Whisk this mixture into the boiling water, stirring until it thickens and becomes clear. The mixture keeps for several days. For a high gloss, brush the loaves a second time after they emerge from the oven.

Making Rye Sourdough Starter

Rye tastes better when sliced with an heirloom knife!

A fixture of weekend lunches when I was a kid was a long rounded loaf of rye bread. My father, a mechanical engineer, applied his precision slicing skills to the crusty brown bread, sawing it into perfect slices with a Bakelite-handled bread knife as we watched impatiently, awaiting our chance to nab a piece as it fell off the loaf. Served with margarine (Fleischmann's at my house), melted cheddar or a bowl of my mother's hearty lentil or split pea soup, nothing could be more satisfying!

Now, years later, I've been on a quest to duplicate that bread, and it has been a journey of trial and error. My first effort produced loaves so dense and hard they could have done double duty as door stops. After some sleuthing through my cookbook collection and online, I arrived at closer approximations of the magic loaf haunting my dreams. It turns out it requires a sourdough starter--basically a mix of flour, water and perhaps a pinch of yeast to get it going. The result is a mixture that turns sour, bubbles and ferments over time. When used in bread-making, it adds a bit of tang, rise and keeping power. (Another fond taste of childhood traces back to the famous San Francisco sourdough loaves, which you can still buy at Fisherman's Wharf.)

So far, I have experimented with two starters, one using white bread flour and the other light rye. What follows is a recipe for the rye; it's from George Greenstein's awesome Secrets of a Jewish Baker: Recipes for 125 Breads from Around the World (Ten Speed Press, Berkeley, 2007). He uses the rye sour to make a host of different rye, sourdough French and whole-grain breads. This time, I used the rye sour to make his baker father's Hungarian-style rye.

Meanwhile, here's Greenstein's recipe for rye sour. The preliminary step is only done the first time. Once you've made the sour from beginning to end, you refrigerate part of it and use it as the "mother" for  the next batch. Sure, it's a bit time-consuming, but then, so is bread making! Still, if you love that great yeasty smell of sourdough, as I do, you'll be happy you took the time.

Preliminary Step


About 48 hours before you want to bake, combine the following in a large bowl:

1/2 cup white rye flour*
1/8 teaspoon active dry yeast
1 cup warm water
1 tablespoon crushed caraway seeds (optional)
1 teaspoon minced onion

Mix until smooth, cover and let stand in a warm spot until bubbly and fermented--up to 24 hours.


*I use King Arthur brand White Rye, but any light rye (with germ removed) will probably do. I haven't tried making the sour with medium, dark or whole-grain rye, but it might work and deserves a try.



Stage One

About 24 hours before you're planning to bake, add to the above starter:

1/2 cup water
1 1/2 cups white rye flour
A few caraway seeds (optional)**

Combine starter, water and 1 1/4 cups rye flour, and stir until smooth. Sprinkle 1/4 cup remaining rye over surface of the dough. Cover with cloth or plastic wrap. Let stand until doubled in size and surface appears cracked. This may take from 4 to 8 hours. Try not to allow the sour to collapse. (I found that by the time I believed the dough was ready, most of the flour had already sunk in, with no apparent cracks but quite a few bubbles, and the surface had a kind of puffy look to it.)


**If using, grind in a coffee or spice grinder or with a mortar and pestle or rolling pin.


Stage Two

If you want to increase the amount of starter, the ingredients below can be doubled, but not more, as the strength of the starter will be compromised.

1/2 cup warm water
1 cup white rye flour

Combine water and 3/4 cup of flour with Stage One sour, and stir until smooth. Sprinkle remaining 1/4 cup of flour over the dough surface, cover and let rise for another 4 to 8 hours. At this point, if you're not going to bake bread that day, you can refrigerate the starter overnight. I did this and took the starter out of the refrigerator the next day to complete its rising for the third and final stage. Insomniac that I am, I rose pretty early and put the starter on the counter. After a few minutes, I saw that the fermentation, which slowed in the refrigerator, picked up steam (literally!), with little bubbles appearing on the surface.

Stage Three


1/2 cup water (better to use warm water if sour has been refrigerated)
1 cup white rye flour

Make sure you use a bowl large
enough to hold the rising starter.
Greenstein suggests preparing the third stage when you're ready to bake; that's what I did. Add the water and flour to the Stage Two starter, cover (and hope the batter doesn't rise over the top, as mine did!). When this stage has fully risen--about double again--you're ready to bake. But before you do, set aside 1/4 to 1/2 cup of the mixture. Put it in a covered nonreactive container (I use a glass jar with a lid that seals) with a slight film of cold water on top. When next you bake, proceed with stages one to three. The sour can be kept for several months, but you need to feed it a little flour and water every few days to keep it active. If you wait a week or so, it will probably be just fine. It can also be frozen.
